Pesto in the House!!
Lately, Pesto has been ringing in my ears! I've never made it before, until just a few months ago... but boy have I perfected it! This recipe is a mixture of a few "well known" ones, but I've added a few kicks to it. Enjoy!
Ingredients
1 cup basil (packed)
1 cup arugula (packed) *you can do spinach but I've found the strong taste of arugula is so good w/ the basil!
1 garlic cloves
1/3 cup toasted pine nuts
1/2 cup grated parmesean cheese
3/4 cup virgin olive oil
salt and pepper to taste
pinch of lemon juice
1) In a food processor combine Basil, Arugula, Pine Nuts, Parmesan cheese, salt & pepper. Chop fine!
2) With the machine running, add 3/4 cup olive oil in a slowly until mixture becomes smooth and almost liquid. You may not finish all of the OO.
3) Move to bowl, and add in a pinch of lemon juice (from a real lemon) and a tab bit more salt/pepper for flavor.
*My picture shows sun dried tomatoes and pieces of breaded chicken. I usually like to add in a vegetable / protein for more nutrition (per my husbands request!). I love how all three foods taste together!!
Grammy's Sunday Quiche (vegetable)

Grammy's Sunday Quiche (vegetable)
As a young girl, I grew up looking forward to my Grammy's quiche. I like to think I've mastered this recipe, because it is one of my favorites! I tend to make it on Sunday morning, before church, and then wait anxiously to get home and eat it all up... the boys go crazy over it!
-1/2 package pie crust mix or ready made (i prefer to make my own with whole wheat/oat flour)
-1 lb. fresh spinach, cooked and chopped, well drained (or 1 pkg frozen chopped cooked)
-1/2 cup chopped green or regular onions
1 clove garlic, minced
2 T butter
1 1/2 cups shredded swiss cheese (i like to buy aged swiss and shred it myself)
3 eggs, lightly beaten (you can do egg whites but I wouldn't bother!)
3/4 milk
1 T salt
1 T leaf basil, crumbled
2 Medium size vine tomatoes, thinly sliced
1 T bread crumbs
1) Prepare crust -- uncooked -- into dish
2) Press excess water of spinach, chop finely
3) Saute onions, garlic and butter in medium size skillet until golden; add spinach, cook until excess moisture evaporates
4) Combine spinach mixture, swiss cheese, eggs, milk, salt, basil in large bowl, stir to mix well. Turn into prepared pastry shell.
5) Arrange thinly sliced tomatoes around outer edge of quiche
5) Bake at 425 for 15 minutes; lower oven temp to 350 for 10 minutes; sprinkle bread crumbs and parmesan cheese over tomato slices. Bake quiche 10 minutes longer or until top is puffy and center moves slightly. Let stand 10 minutes!
This quiche is full of every vitamin, try not to skimp on the eggs, milk, cheese.. full fat will not kill you!
